Turkey Chili

1 lb. 93 percent lean ground turkey meat

8 oz. white mushrooms, finely minced

1 cup finely minced yellow onion (about 1 large)

1/2 cup finely minced or shredded carrots (about 1 large)

1/2 cup finely minced bell pepper (red, orange or green)

2 tsp. minced fresh garlic (about 2 to 3 large cloves)

1 15.5 oz. can black beans, no salt added

1 15.5 oz. can kidney beans, no salt added

2 28 oz. cans crushed tomatoes, no salt added

1/2 cup barbecue sauce

1 TB. apple cider vinegar

2 tsp. smoked paprika

1 tsp. chili powder (or to taste)

1 tsp. hot sauce like sriracha

1 tsp. ground cumin

1/2 tsp. ground black pepper

1/2 tsp. cinnamon

1/8 tsp. sea salt

Heat a large pan over high heat for one minute or preheat cooking surface of crockpot to high heat. Add ground turkey meat, and sauté for about 4 to 5 minutes, until cooked through. Add mushrooms, onion, carrots, pepper and garlic, and stir.  Cover, and cook for about 8 minutes, stirring at least once a minute.  Remove from pan, and place in crockpot or turn crockpot setting from high heat cooking to slow cooking. Stir in black beans, kidney beans, crushed tomatoes, barbecue sauce, apple cider vinegar, spices and salt. Let cook on low for 6 hours.

Note: All of fresh vegetables can be minced in food processor.
